Happy Birthday Dad - Kesari - Recipe Marathon - Day 13

Today is my Dad' s birthday. He likes kesari a lot, guess Ive been adding a line about my dad in every other recipe. The reason behind me and my mom being good cooks is my dad, if you do not have a person who will relish your cooking,you will not feel like cooking at all. Am I right? Trust me he is our biggest critic, here again it helps me to improvise on my cooking. Mom also sees it in the same way.
Now on to the recipe. We made this sweet, in the morning and by the time I was back home it was all gone. My dad just loves sweets and nothing absolutely nothing can stop him eating it.

Ingredients:
Rava - 2 cups
Sugar - 3 cups ( Im being generous with Sugar)
Cashew nuts - a handful
Ghee - 1 cup

Method:
Roast the rava in frying pan with very little ghee , till you get the flavour of roasted rava. Now add water and let the rava get cooked well. After its cooked well add sugar part by part, stirring in constantly.
In a separate small pan add some ghee and fry the cashew nuts till golden brown. Stir in ghee along with the fried cashews to the rava mixture and keep stirring. After some time you will see the ghee leaving the sides of the pan. Now your kesari is done . Though I prefer a kesari with no artificial color , dad likes it to be in sunset yellow, hence I added this color to it. You can either add the color or not.
The kesari had come out well and he liked it a lot, the empty dhabba spoke for the kesari's taste. Today is also another special day, we have two enthusiatic girls joining us in the recipe marathon,Karuna of Foodie By Nature and Roochi of Roochis. I welcome them with this sweet dish.
