Egg Masala with Onions


4 - Hard Boiled Eggs
3 Thin sliced Onions
2 Thin sliced Tomatoes
3 tsp - Red chili Powder
Salt to taste
Mustard Seeds for seasoning
Oil for frying


Boil the eggs , de shell them and set it aside. In a pan heat a little oil and then add mustard seeds. After they sputter add the thinly sliced onions and tomatoes and saute. Add along with this the red chili powder and salt. Keep stirring till they reach a gravy like stuff. Slit the eggs lengthwise and add it to the gravy. Simmer for 5 minutes and then serve hot with sambhar and rice. This is also a good side dish for chapati or roti.
