Think Spice Think ANISE


When I saw this event listed under http://sunitabhuyan.blogspot.com/2008/02/think-garlic-round-up-and-announcing.html . I was immediately reminded of the tomato rice that I make , in which Star Anise is the most important ingredient that gives out the aroma for the dish . So here goes my entry for the event .

Tomato Rice

Ingredients
1- Cup Basmati Rice
2 ripe tomatoes - thin sliced
1 Thin sliced Onion
2 Green chillies slit
Curry leaves
1 Star Anise
1 Bay Leaf
1 Clove
1 Cardamon Pod
Coriander leaves for garnish
2 Spoons Red Chili Powder
Salt and Oil

Method

Soak the rice in water for 15 mins. In a thick bottom pan , heat a little oil and add the spices . When the aroma starts to come out , add the thin sliced tomatoes and onion. Saute them along with a few curry leaves. Add the red chili powder and salt . Let this mixture form a thick gravy like consistency. Now add the soaked rice and let it simmer for 15 mins . Take this mixture in a vessel and add 2 parts of water to it . Pressure cook it for 3 whistles and open when cool . Add coriander leaves and mix well after removing it from the cooker.
Serve hot with Potato curry and raitha.



AFAM - Pomegranate


Ingredients
2 Ripe Red Tomatoes
1 cup Pomegranate kernels
2 spoons Honey
A Dash of Lime Juice

Method
Dice the tomatoes coarsely and mix with the pomegranate kernels in a blender. Do not add water . Filter the juice to get the essence. Chill in the refrigerator . Add honey and a dash of lime just before you serve .
