Koothanchoru - Revisited for Recipe Marathon - Day 4

Its fun to do this Kootanchoru, it recreates the excitement that a typical girl in a Village down south will have when she makes it using her doll utensils. Its rich in protein and has all the nutrients for a complete meal. The best side dish for this is freshly prepared Raw mango pickle along with Papadam. Papadam is different from appalam.People from Kerala will know the difference very clearly. Papadam tastes good with this Rice. I always have a stock of Papadam safely wrapped in a plastic cover away in the freezer, because my dad loves this a lot. But I dont make it that often since when you fry a papadam the consumption of oil is higher when compared to Appalam.

Now , receipe for instant Raw Mango Pickle
Raw mango - 1 cup
Red Chillie Powder - 2 table spoons
Oil - to season
Mustard Seeds - 1 teaspoon
Salt to taste
Cut the raw mango into small pieces, and add red chillie powder along with salt to it. Heat oil in a small pan and add mustard seeds followed by generous heap of Asafoetida powder( This adds a very authentic aroma to the pickle, which is simply amazing) I can smell it as I type since I just love it so much. Pour this seasoned mixture onto the Raw mango mixture and mix well. Raw mango pickle ready.
