Cluster Beans Stir Fry - Recipe Marathon - Day 8

I pinch myself whenever I type in a post, I'm quite a bit of a lazy bone. But pull at times of need. I had a hectic day today and just logged in to have a sweet surprise ,my dear runner in the Recipe Marathon has passed on a Friendship Award to me. Very sweet of her. Thanks a ton dear.

Now on to today's recipe. This is again my dad's favorite dish, cluster beans stir fry. Simple yet tasty to eat. This goes well with Sambhar rice, or even Vathakulambu. Sometimes my dad goes for vegetable shopping, his favourite time pass, I will take it for granted that he will purchase cluster beans and will awe at its freshness and availability in Pazhamudir Cholai ( the usual place where I do vegetable shopping)


Ingredients:
Cluster Beans - 1/2 kg
Redchillie Powder - 2 tsp
Onion - 1 cup
Coconut - scrapped - 1/2 cup
salt to taste
For tempering - oil , mustard seeds and curry leaves

Method:
Wash the cluster beans and drain of the water. Let it dry for some time before you cut them into small pieces. Boil the cut cluster beans along with redchillie powder in a pressure cooker. Cook it for just two whistles. When redchillie powder is added before being cooked in the cooker , the cluster beans will absorb the flavour of the redchillie. Remove it and let it cool. In a frying pan add little oil and when its hot add the ingredients for tempering. Mustard seeds followed by the curry leaves. Transfer the cooked cluster beans to the frying pan and mix well after adding salt. Let all the water content evaporate from the cluster beans, stir until you feel the water has evaporated. Turn off the heat and then add the freshly scrapped coconut. Heat this for a minute or two in the microwave before you serve.
