Millet Kheer / Millet Payasam


Next in the series of Super grains is Millet/Thinnai Payasam.
Super easy and healthy dessert too.
It is vey flavorful and can be made using almond milk or coconut milk also

Ingredients

Millets/ Thinnai - 1 cup
Coconut milk - 1 cup
Jaggery water - 2 cups
Cashews and raisins - for garnish
Ghee - 1 cup



Method

Fry the super grain for a couple of minutes in ghee.
Pour milk or water in it and let is boil till the millet is cooked completely
Let this mixture cool
In the meanwhile, powder jiggery and mix well in limited water
Let it dissolve completely.
Strain the jiggery syrup and pour it on the cooked millet mixture.
Let this boil at a very low flame.
Add almond milk or Coconut milk or normal milk to this mixture
Now , be very careful not to let it boil.
It should cook in low flame, until it reaches a Kheer consistency
In another pan, heat ghee and fry raisins first followed by cashews
Fry them till golden brown and add it to the Kheer
This can be served warm or chilled.

Rice Kheer

In India, any special occasion starts with a sweet. I am getting back to blogging after so many months that I have actually lost track. So am starting it with a sweet, that is often made at my home for Friday pujas. A simple dessert but rich in terms of what goes into it and of course the calories
 
A Simple yet Creamy and Rich Rice Kheer
 
Ingredients
 
Long Basmati Rice - 1/2 cup
Milk - 2 cups
Sugar - 1 cup
Ghee - 1 tbsp.
Cashew and Raisin- a few
Cardamom powder - a pinch
Edible camphor ( optional ) - half pinch
 
 
 

Method
 
Rinse well and soak the rice for a good half hour
Cook it separately and drain the water
Heat the milk in a thick bottomed pan
Keep the flame on medium while stirring occasionally
When it reduces to half its quantity, add sugar little by little
Reduced milk will have a sweet taste on it own, so keep a tab on the sweetness.
Keep stirring and slowly add the cooked rice.
Ensure that you don't break the rice while stirring
Add cardamom and edible cardamom powder
Serve chilled or hot.

Badam Kheer

Last day of First Week marathon. It is a dessert for my Party Menu. 

A simple dish that can be made ahead and served in a big bowl or in individual portions.

Yes it is the heavenly sinful Badam Kheer. This has always been my favorite when I visit Shree Mithai. This dish in particular is very close to my heart. A small story on why it is close to my heart. When I made this dish and took it to office, a colleague of mine could not resist when she saw the Kheer and had about 7 spoons of the Kheer. Now you may wonder what is so special about her having so much Kheer. The point is that, she was on a strict diet and never budges for any delicacy that might ruin her diet. She made my day, I did not have the heart to stop her. She made my day by her act. 

Ingredients

Badam - 2 cups soaked in milk
Milk - 1.5 litres
Sugar - as per taste
Badam and Saffron strands for garnish 



Method

Soak the Badam in warm milk for about an hour s time
In the mean time boil and milk and keep it aside
Blend the soaked Badam into a smooth paste.
Add the blended paste and sugar to the boiled milk 
Keep stirring in low flame till the whole mixture thickens
Dissolve saffron strands in a little milk and add to the Kheer
Saffron adds color and flavor to the Kheer
