Vegetable Briyani - Recipe Marathon - Day 20

Briyani is an accepted food anytime of the day for people at my office and be it any briyani , they will just gobble it down. I made Vegetable briyani with Gobi Masala and Onion Raitha. People at office relished the dish a lot. Any office I go , my team will always love the food I make. It actually motivates me to cook even the more better and more often ( may be that s why they appreciate my cooking, anyways )
Ingredients:
For Briyani:
Basmati Rice - 2 cups
Assorted Veggies - I used frozen carrot , beans and peas
Onion - 1 cup sliced.
Tomato - 1 cup sliced.
Spices - Clove , cinnamon , bale leaves, cardamom.
Red chillie powder - 2 spoons
Green Chillies - 2
Coriander Powder -1 spoon
Garam masala -1 tea spoon
Coriander and Pudhina leaves - a handful.
Salt to taste
For Gobi Masala:
Gobi Florets - 1 cup
Onion - 1 cup sliced
Tomato - 1 cup sliced
Red chillie powder - 2 spoons
Coriander Powder - 1 spoon
Salt to taste.
For onion raitha:
Onion - 1 cup finely shopped
Dahi - 1 cup
Coriander leaves - a small bunched chopped finely
Salt to taste
Method:
Vegetable Briyani:
Soak the Basmathi rice in water for about 30 mins. In a frying pan, heat a little oil and add the spices followed by onions and tomatoes. Saute a little while before adding the Red chillie powder and coriander powder. Add the coriander and pudhina leaves and saute for some more time. When the mixture forms a gravy like paste, add the basmati rice and two parts of water to it. Let it boil well and the water gets evaporated. Now remove it the rice to another vessel and steam it in a pressure cooker for about three whistles. Remove from fire and when cool open to get the wonderful flavour of Vegetable Briyani.

Gobi Masala:
Boil the gobi florets in hot water and remove when they are 3/4th done. This is to maintain the crispy nature of gobi. In a frying pan add a little oil and when hot add the sliced onions and tomato. To this add redchilli powder and coriander powder along with salt. When this mixture is done halfway add the boiled gobi florets and stir well. Add a little water to this and bring it to a gravy consistency. Remove from fire and sprinkle some garam masala powder and coriander leaves to garnish., this will also enhance the flavour of the dish.
Onion Raitha:
In a bowl add the finely chopped onions along with Dahi and salt. Mix well and garnish with Coriander leaves.
