Appam - Recipe Marathon - Day 12

Hey people, Im very happy today. I was the winner for a Riddle Me #3 Im posting an instant sweet preparation today. This Appam I do it for Krishna Jayanthi and for Karthikai Deepam. This is very simple and yet tasty one. Calorie concious folks stay away that includes me also. now for the recipe.
Ingredients:
Maida - 3 cups
Jaggery - 2 cups ( depends on your requirement)
A pinch of salt.
Oil - for deep fry.

Method:
Powder jaggery and put it in a large bowl, pour 2 cups of water, so that jaggery is immersed in it . Leave it for sometime, say 30mins. Then use your hands and mix jaggery well with water and strain the whole mixture through a fine sieve or cloth. This is because Jaggery will have lot of foreign particles in it. In this method you can avoid foreign particles becoming your food. Now in another bowl add maida, pinch of salt and the jaggery water. Mix well to an extent where in there are no lumps. The batter should be a smooth one and the consistency of dosa batter.
Heat oil in a deep frying pan. When the oil is hot take one laddle of batter and pour it into the hot oil.
Care should be taken to maintain the flame at a medium level, so that the appam is cooked properly at the same time its not over burnt. After some time turn it over.
When your appam is in golden brown color, its time to remove it onto a tissue paper and serve hot.

Kamalika, nice recipe. to get healthier version u can replace maida with wheat flour or semolina. It wud taste deleicous too :). We make that way in our place.

Nice Appam Kamalika...Btw I have seen long before in urs that you are from Ambasamudram or nearby..Is this ur native place?
